Or yams? Or pumpkin?

At our house, it’s a meat-free Thanksgiving.
Even though I haven’t eaten any meat or poultry of any kind since 1971, I used to continue to roast a turkey for Thanksgiving for my son and guests up until a few years ago when I learned about the horrors of factory farming.
Now I tell everyone if they want to eat meat, they can do it someplace else. I haven’t lost anyone yet, so I guess the food I do serve is tasty enough to keep ’em coming!
Here’s our Thanksgiving dinner menu:
- Lentil-Walnut loaf (full of protein)
- Kugel (click on it for the recipe)
- Stuffing
- Mashed potatoes with vegan gravy
- Salad
- Roasted yams
- Challah
- Apple and Pumpkin Pie

Angel Boy and DIL have gone back to their own lives and my tugboat man and I didn’t have many leftovers because we packed them up with the kids — all except for the roasted yams.
I’m a frugal and thrifty gal when I’m not shopping, really I am. Honest. I swear. For reals.
Here’s what I did with them and it was soo easy!
I used my tried and true recipe for banana bread but replaced the bananas with mashed up yams (you could use sweet potatoes or pumpkin too, of course).
Look how moist and yummy it looks along with oatmeal raisin cookies.
So simple; one bowl; you don’t need to bring out the big mixer for this one.
Leftover Sweet Potato (or Yam or Pumpkin) Bread
2 cups flour (I use 1/2 whole wheat)
1 cup sugar (brown and white)
2 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt
Mashed yam/sweet potato, about a cup
2 eggs
1/3 cup vegetable oil
2-3 TBS milk (or plain, unflavored yogurt)
1 tsp. vanilla (optional: 1 TBS pure maple syrup)
1/3 chopped nuts (I used walnuts)
Mix oil, eggs, vanilla, milk. Add sugar(s) and mix well.
Add mashed yam and mix well. I use a fork; it’s so easy!
Add flour combined with other dry ingredients and nuts. Mix well.
Turn into a loaf pan and bake at 350 degrees for about fifty minutes until toothpick inserted in center comes out clean.
When cool, I make a little glaze with 1/2 cup powdered sugar and 1 TBS orange juice. It adds a nice sheen to the top of the loaf.
Super delicious with an afternoon cuppa. My fave is ginger tea. Enjoy!

I can’t begin to cook/bake as good as my mom, but I come pretty close. I was going to open a bakery once, but alas, like most things I think of, it involved too much actual work plus I’d have to get up at an unholy hour. Hub was almost a complete vegetarian when we met (very strange for a tough merchant mariner) but he quickly got on board and is now wanting to take it a step further to complete veganism. Without eggs/milk, it’d be tough for me to find enough substitutes for baking, I think, and recreate all the recipes I love to make.

Why yes I do have leftover sweet potatoes. Definitely trying this loaf. 🙂 I also want to try the lentil- walnut one too. I made a chocolate brownie sort of thing last night with almond butter, dates, black beans, eggs, a little bit of flour, and I think that was about it. It’s actually pretty good. Not sweet, more like a chocolate loaf but a nice snack, heated with a little coconut ice cream and it was great. The black beans I got from you. xo

Hey, that sounds delicious! Almond butter, dates, chocy, how can you go wrong? I’m doing something crazy decadent today; making my mom’s chocy fudge. No corn syrup, stirring it for an hour non stop. Really the best thing ever. Will have pics/post. Too bad my new camera’s not here yet!!

But I just don’t know!!! I really don’t like to do anything but be me and shop and bake and read. And none of that for people so I could make $$$. Very frustrating for hub ha ha

Well, your passion shows when you talk about that stuff. Just do more of it. Think about how you – as an expert shopper or baker or reader – could help someone like me (for instance) who is none of those things. It’s all in the details. And the things you take for granted about any one of them – like stuff you just figure people should know about – they don’t don’t have a clue. That’s where you can help. Tap into that. Then you are off to the races. Putting together outfits. Where to get the best stuff – shoes, clothes, bags, etc. How to dress like a million bucks without spending a million bucks. That kind of stuff. I’d want to read it.

Seriously they should ban factory farming. I enjoy meat but I do my best to buy from local farms where animals are humanely treated. And aren’t pumped full of junk. Fortunately our co-op also provides locally sourced meat. Cruelty does not have to be part of the diet. We also cook a lot of vegetarian meals for the family as my sister doesn’t eat meat. There are so many possibilities for dishes.

So true, cruelty does not have to be part of the meal. I know my son wanted me to get some humanely sourced meat, but I just couldn’t do it. I don’t even want it in my oven anymore. Oh well. He can cook it himself if he wants to. A few meatless meals aren’t going to hurt him! Hope your holidays are shaping up to be happy!

Now you’re making me feel VERY old! LOL I had a boyfriend who wanted to go meatless, and I stayed that way even tho he and I broke up. That was about the only “good” that came out of that relationship.
