Probably nothing, if you must know, but when we were in Sacramento a couple weeks ago, we stopped for a brief tourist-y couple of hours in Old Sacramento where we purchased fudge from a candy store, and it wasn’t very good.

You know how when your mouth is watering and you’re anticipating the feel and texture of good fudge doing its slow and sultry dissolve, filling your senses with the magnificence of rich flavorful chocolate??….Well, it didn’t happen, so I knew it was time for me to make a batch.

I’ve been making fudge since I was about six years old — always with my mom and her tried and true recipe, which is Hershey’s tried and true recipe.

All fudge is judged by that recipe and that taste.

There is NONE better.

In fact, I would double dog dare you to a “fudge-off” and surpass the delicious fudge creaminess of this fudge. I know a lot of recipes call for corn syrup but this one does not and I think it’s better.

Starting out… Don’t let it bubble over!!!

When the candy thermometer hits 234 degrees, that’s the time to take it off the heat. Add butter and vanilla. Let it cool down to 110 degrees. Don’t stir too soon!!!

When it reaches 110 degrees, beat it until it starts to lose its glossy color. It takes about 15 or 20 minutes, so you’ll get a work out.

Pour into 9×9 pan. Wait for it to set up firm and lovely and oh so creamy.

Hershey‘s Fudge
This is the recipe. Follow it EXACTLY. It’s perfect just the way it is.

  • 3 cups sugar
  • 2/3 cup HERSHEY’S Cocoa or HERSHEY’S SPECIAL DARK Cocoa
  • 1/8 teaspoon salt
  • 1-1/2 cups milk (I used nonfat ‘cos that’s what we have on hand.)
  • 1/4 cup(1/2 stick) butter
  • 1 teaspoon vanilla extract

1. Line 8-or 9-inch square pan with foil, extending foil over edges of pan. Butter foil.

2. Mix sugar, cocoa and salt in heavy 4-quart saucepan; stir in milk. Cook over medium heat, stirring constantly, until mixture comes to full rolling boil. Boil, without stirring, until mixture reaches 234°F on candy thermometer or until small amount of mixture dropped into very cold water, forms a soft ball which flattens when removed from water. (Bulb of candy thermometer should not rest on bottom of saucepan.)

3. Remove from heat. Add butter and vanilla. DO NOT STIR. Cool at room temperature to 110°F (lukewarm). Beat with wooden spoon until fudge thickens and just begins to lose some of its gloss. Quickly spread in prepared pan; cool completely. Cut into squares. Store in tightly covered container at room temperature. About 36 pieces or 1-3/4 pounds.

NOTE: For best results, do not double this recipe. This is one of our most requested recipes, but also one of our most difficult. The directions must be followed exactly. Beat too little and the fudge is too soft. Beat too long and it becomes hard and sugary.

Even though I haven’t eaten any meat or poultry of any kind since 1971, I used to continue to roast a turkey for Thanksgiving for my son and guests up until a few years ago when I learned about the horrors of factory farming.

Now I tell everyone if they want to eat meat, they can do it someplace else. I haven’t lost anyone yet, so I guess the food I do serve is tasty enough to keep ’em coming!

Here’s our Thanksgiving dinner menu:

  • Lentil-Walnut loaf (full of protein)
  • Kugel (click on it for the recipe)
  • Stuffing
  • Mashed potatoes with vegan gravy
  • Salad
  • Roasted yams
  • Challah
  • Apple and Pumpkin Pie

Angel Boy and DIL have gone back to their own lives and my tugboat man and I didn’t have many leftovers because we packed them up with the kids — all except for the roasted yams.

I’m a frugal and thrifty gal when I’m not shopping, really I am. Honest. I swear. For reals.

Here’s what I did with them and it was soo easy!

I used my tried and true recipe for banana bread but replaced the bananas with mashed up yams (you could use sweet potatoes or pumpkin too, of course).

So simple; one bowl; you don’t need to bring out the big mixer for this one.

Leftover Sweet Potato (or Yam or Pumpkin) Bread
2 cups flour (I use 1/2 whole wheat)
1 cup sugar (brown and white)
2 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt
Mashed yam/sweet potato, about a cup
2 eggs
1/3 cup vegetable oil
2-3 TBS milk (or plain, unflavored yogurt)
1 tsp. vanilla (optional: 1 TBS pure maple syrup)
1/3 chopped nuts (I used walnuts)

Mix oil, eggs, vanilla, milk. Add sugar(s) and mix well.
Add mashed yam and mix well. I use a fork; it’s so easy!
Add flour combined with other dry ingredients and nuts. Mix well.
Turn into a loaf pan and bake at 350 degrees for about fifty minutes until toothpick inserted in center comes out clean.
When cool, I make a little glaze with 1/2 cup powdered sugar and 1 TBS orange juice. It adds a nice sheen to the top of the loaf.

Super delicious with an afternoon cuppa. My fave is ginger tea. Enjoy!

Even though it’s the beginning of December and was the fifth night of Hannukah, here in Southern California we enjoyed a brief summery Sunday before a massive winter storm barrels down the coast from Alaska.

A late afternoon beach walk in Carlsbad…magnificent sunset, boats, seagulls flying home. Not such big waves, though I bet the winter storm will bring plenty of surf energy.

Maybe that’s why I get so excited for the WordPress snow to appear.

It’s the only snow I see unless we go skiing!

Saving Wolves

US-National-Parks-Yellowstone-Wolf-Quest-2-wolvesI wish that I could wave a magic wand and make the world a kinder place for animals; cats, dogs, cows, pigs, sheep, horses, whales, dolphins, elephants, animals used in laboratory experiments — you get the picture, right?

Animals are awesome.

Animals should have legal rights — they should be better protected and defended.

Everyone has issues they’re passionate about, and this is one of mine.

No animal needs our help more than wolves.

Wolves are being killed, slaughtered, mutilated, exterminated.

I went to Sacramento so that I could testify at the Fish and Wildlife Service‘s wolf delisting hearing on November 22. Being around hunters and others who enjoy killing animals makes me so mad that you can almost see me explode with RAGE. The smoke-out-of-the-ears kind of rage. The kind of rage that has no filter. THAT kind of rage.

I’m sure that I’m one of the most skeptical people in the world when it comes to the reasons why our government is motivated to do ANYTHING, but this particular issue boggles my mind to a crazy degree.

This horrible and scientifically flawed idea that wolves are in a position to have recovered enough numbers to be formally removed from the Endangered Species List is what has driven thousands of Americans to protest, speak out, argue against it, and do whatever they can to continue to protect these beautiful creatures from certain extinction — again.

A hunter who kills a wolf belongs to a subsection — a microcosm —  of a human being whose sole purpose in life is the extermination of a species.

It’s scary, people. Really scary.

From what I understand, funded in part by the Koch Brothers’ smoke screen organization, American Prosperity Group, ranchers and hunters have declared an all-out war against the wolf — any wolf, Gray Wolf, Red Wolf or Mexican Wolf, coyotes, any and all predators that they incorrectly believe threaten THEIR skewed right to breed, grow, and eventually murder their own cattle and sheep.

Current research indicates other successful non-lethal options to protect their “investment” animals — living and breathing creatures whose sole existence is to breed and grow to one day be killed — yet another reason why we don’t eat meat.

What this potential delisting has helped to unleash is a group of sadistic hunters who are entrenched in zoosadism.

Zoosadism is a term used to refer to the pleasure that an individual gains from the cruelty to animals. SEXUAL PLEASURE. Zoosadism is getting sexually excited by causing harm to animals and is considered a form of animal abuse. Have you seen all those horrible photos on the internet? Zoosadists are true sociopaths.

At the hearing, one of the first speakers was Chief Caleen Sisk of the Winnemem WintuTribe of American Indians near Mount Shasta. She received much deserved applause and shouts of support when she said that the wolf had long been a spiritual figure for her tribe.

“The wolf is our teacher,” she said, explaining that its extended pack relationships served as an example for human families. She compared the hunting of wolves out of fear to the killing of American Indians.

There were so many amazing speakers who spoke with intelligence, passion, dedication, and concern for the wolf.

WIth 500-600 attendees and the knowledge that there was a videographer who recorded all the speeches as official government testimony, you’d think I would have been nervous, but I’ve always had plenty of public speaking confidence (some might call it chutzpah,) — especially in five-inch heels.

“It is past time to take the words of Gandhi to heart: “The greatness of a nation and its moral progress can be judged by the way its animals are treated.”

Why is the term “delisting” synonymous with hunting, bloodsport, and the murder of a species?

Is this the only barbaric method “good science” has for “species management”?

Instead, let’s call it what it really is: government sanctioned murder.

De-listing really means that it’s OK to hunt, torture, and destroy species and is really just legalizes more brutality.

We cannot allow the current administration to give up on wolf recovery for the gray wolf OR the Mexican wolf or relinquish species survival to the states.

I’m from here in California where we have excellent habitat but no wolves and I absolutely do NOT support any (Fish and Wildlife Service’s) proposal to delist the gray wolf, a barely recovering endangered species that’s currently being slaughtered for political gain.

We need to manage wolves and other wildlife in a healthy and sustainable way so that future generations can enjoy the benefits of our rich wildlife heritage. However, management cannot mean the hunting and murder of a species.

That the irrational and enduring hostility to wolves still exists, and that hundreds of more wolves will be killed — is wrong and the cruel methods allowed for hunting and trapping wolves are deeply disturbing and sociopathic, egregious, and inhumane.

Our own life changing visit to Yellowstone in August fulfilled my lifelong dream to see the wolves of Lamar Valley.

At 6:00 a.m., a few miles outside our camp at Slough Creek, we followed others to a bison carcass, and our efforts paid off with a multiple sighting of many wolves, including 755.

There was an overwhelming sense of awe among the dozens of us who silently watched him cross the road and then a collective sigh of relief when he disappeared safely over the ridge.

Those same wolves are being murdered the instant they cross that invisible border out of the park. It’s absolutely insane.

WE hold the power to ensure that we’re not the last generation to view a wolf in nature; not confined in a zoo, or most importantly, not dead after being tortured and then displayed as a “trophy”.

The truth is that wolf recovery is far from over.

According to many leading scientists, we’ve entered into an era of mass extinction, which will not have run its course until biodiversity levels are less than twenty-five percent of what they are now.

I’m here to push back against this culture of extinction.

I’m here because of the legacy I want to leave behind for our children.

More than thirty years ago, I did my small part to advocate for the addition of wolves to the Endangered Species List.

I wrote letters and joined forces with groups dedicated to protecting the wolf from certain extinction and it’s shameful that we’re back to the beginning.

It appears that the last thirty years have culminated in the nurturing of this species’ growth for the single sacrificial purpose to provide animals for thrill killing hunter/murderers and that’s why continued protection is even more necessary.

Our collective legacy will not be celebrating wolf recovery, but rather their unnecessary deaths will become your ONLY legacy.

Do NOT delist the gray wolf. Outlaw all hunting of wolves.”

When a Zygocactus Blooms, It’s a Sure Sign the Holidays are Coming!

Whether you call it Christmas Cactus or Zygocactus, it’s really a Schlumbergera hybrid.

Christmas Cactus1Today at Casa de Enchanted Seashells, we’re packing up to drive the eight hours it takes to get to Sacramento so I can testify at the Fish and Wildlife hearing  on Friday to protest the delisting of wolves from the Endangered Species List.

However and whatever…

I’ve got a new black suit, AMAZING heels, and a speech that I hope will make a difference, ‘cos that’s what it’s really all about.

While we’ve been getting ready, I noticed a magnificent plant blooming and crying out for attention.

My bright little pot loves to sit in our kitchen window for most of the year; when I see the red buds at the tips of the leaves, I know it won’t be long before the massive butterfly blooms emerge. 

I love to say “zygocactus” like ten times in a row cos it feels so good as it rolls off the tongue, plus it’s really easy to grow!

You try it. It’s neat, huh?

Schlumbergera truncatus blooms closer to Thanksgiving while Schlumbergera bridgesii blooms closer to Christmas, but through hybridization there is a certain overlapping of blooming times.

This is the most intense pink; the flowers feel kind of waxy or fleshy.

Schlumbergera are epiphytes (tree-dwelling) originating in the mountainous rainforests of Brazil.

It’s excellent as hanging basket plant on a sheltered patio, or can be brought indoors in a bright area with excellent airflow.

Think about how lovely a blooming plant will be as a gift to bring joy for many years.

I’ve had pretty good success propagating these beauties by snipping a cutting at the natural “joint”, letting it dry out for a couple days, and then planting in sandy soil, keeping it only slightly moist until roots appear.

Don’t make the same mistakes I did by letting it get too wet or it’ll rot and die.

The next time you hear from me, I’ll be in Sacramento, meeting other wolf advocates and giving my two cents worth to a panel of Fish and Wildlife members who have blood on their hands from the senseless deaths of hundreds of beautiful wolves.

However, they have yet to hear from Princess Rosebud.

The Unbearable Death of a Boy-Man

The loss of a child cannot be fathomed.

Who could ever be prepared for their child to die before them?

There must be endless tears and sorrow and sadness and a forever and unrelenting pain.

For me, it’s a pure and simple matter.

If I never heard my son’s voice again or was never able to wrap my arms around him, I don’t know if I could take another breath.

…On Wednesday, November 13, 2013, Kirk Passmore, 32, a passionate big-wave surfing veteran and Hawaii resident, is presumed to have drowned and as of today his body has not been found.

One minute he was alive, surfing an estimated 20-foot wave at Alligator Rock on Oahu’s North Shore, with an audience of other surfers and photographers.

He dropped into the steep face of the wave before falling over the front of his board and into the water.

The top of the wave crashed over him and witnesses say he surfaced for a brief moment before he was crushed by another wave.

It was the last time anyone saw him.

Although extensive searches have been conducted in the area, he’s been missing since the day of the accident and is presumed drowned.

It was all caught on video.

This is the video of his last wave. Somehow he never made it out alive.

His dad wanted the his final ride shared with as many people as possible.

Maybe you heard about this. Maybe you were watching the news on television and you paid scant attention to the story while you were on the computer or eating dinner.

Maybe you read it on the internet and saw the pictures or the video.

You probably thought to yourself or even said out loud, ” Wow, that’s really sad.”

Why am I writing about him?

Yes, it’s true that he was someone’s child, brother, friend.

But he was also one of my son’s friends.

They went to school together.

He’s the first of my son’s friends to die.

Kirk had the biggest smile and the reddest hair. Everyone called him “Fanta” or “Red”.

He was one of the many boys I’d chauffeur around, packed like sardines in the back seat, all gangly legs and arms, endlessly stuffing their mouths —  bottomless pits of growing boy bodies– with the cookies and smoothies and other snacks cheerfully provided to everyone who came over.

A carful of boys talking about school, skateboarding; laughing, always smiling, always a thank you for the ride as he slammed the car door.

“See ya, Jason.”

A flash of bright red hair lit the way as he ran up the walkway to his house.

But no more.

I bet for most of these boys – and I still call these thirty-somethings BOYS because to me they will always and forever be “the boys” or “the guys” — my son’s friends from Kelly Elementary, Valley Junior High, and Carlsbad High School — this is their first experience with death and subsequent thoughts of their own mortality.

I feel so bad for his family and his friends who are mourning him with candlelight vigils, surf paddle-outs, tributes, and memorials. 

To honor Kirk, they’re handling their pain with grace and beauty.

One of them, artist Bryan Snyder, created a memorial wall in our town. If you’re ever in Carlsbad, check it out.

Our deepest sympathies go out to Kirk’s family. Our hearts are heavy and we are so very, very sorry for their loss.

The Passmore family released the following statement:

Kirk was born February 11, 1981 in Orem, Utah.  He grew up in Carlsbad, California and graduated from Carlsbad High School in 1999 where he was a member of the school’s surf team for four years.  As a youth, he was active in pop warner football, little league baseball, and basketball but his love was in surfing.

He started coming to Hawaii when he was 14 and was an experienced and expert surfer.  He was not new to big wave surfing, having surfed most of the well-known big wave locations, including Waimea Bay, Sunset Beach, Pipeline and outer reefs on the north shores of Hawaii.  He was a familiar face at Todos Santos off Baja California.  He also surfed Maverick’s in northern California and Puerto Escondido in Mainland Mexico.  He spent 3 years in the southern coast of France.  He moved to the north shore of Hawaii full-time in the spring of 2012.

Kirk was a part owner of Third Stone Surfboards in Waialua, Hawaii and a Manager at Bonzai Sushi in Haleiwa, Hawaii.

He is survived by his mother, Diane Passmore (Orem, Utah), father and step-mother, David and Karey Passmore (Sunset Beach, Hawaii), siblings, Alyson Adams (Highland, Utah); Merrily Roberts (Encinitas, California) and Matthew Passmore (serving an LDS mission in New York, New York).

The family wishes to thank the Coast Guard, the City and County of Honolulu lifeguards and Fire Department who continue the search.

These came to be known as Kristallnacht (now commonly translated as “Night of Broken Glass”), a reference to the untold numbers of broken windows of synagogues, Jewish-owned stores, community centers, and homes plundered and destroyed during the pogroms.

Encouraged by the Nazi regime, the rioters burned or destroyed 267 synagogues, vandalized or looted 7,500 Jewish businesses, and killed at least 91 Jewish people, and 30,000 Jews arrested and sent to camps.

They also damaged many Jewish cemeteries, hospitals, schools, and homes as police and fire brigades stood aside. Kristallnacht was a turning point in history. The pogroms marked an intensification of Nazi anti-Jewish policy that would culminate in the Holocaust—the systematic, state-sponsored murder of Jews.

Happiness is a Fruit + Veggie Bread Recipe: Zucchini, Carrot, and Apple

This recipe is my own adaptation of a zucchini bread; it’s not too sweet and gets better the day after– if you can wait! Sometimes I drizzle over the top a simple glaze of powdered sugar mixed with orange juice and a little orange zest. It sort of enhances all the flavors.

3-in-1 Fruit and Veggie Bread

Grate enough zucchini to end up with about 1 cup or so packed
1 carrot, grated
1 apple, grated
Zest of one orange
1 teaspoon vanilla plus 1 tablespoon juice from orange
2 cups flour (I use all or part whole wheat)
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon allspice
½ cup granulated sugar
½ cup brown sugar
2 large eggs
1/4  plus 1 tablespoon cup plain nonfat yogurt or nonfat sour cream
1/3 cup vegetable oil
You can always add dried fruit or blueberries or nuts. My recipes usually reflect what I have around the pantry.
Directions: Mix together all the dry ingredients, add everything else, mix until well incorporated. Fold into loaf pan. Bake in preheated 375 degree oven for about 45 minutes, check often so it doesn’t become too brown.

Breaking News: See-Through Yoga Pants From Lululemon. Get ‘Em While They’re Hot!

This is one of my most searched for and read posts. I’m re-posting due to Lululemon’s  wonderful new marketing campaign targeting female thigh size, and I wrote it just prior to the resignation of the CEO.

Do I hear a WTF? A what-what?

Even in the midst of body conscious Suthern Caly-forn-eye-A, we who aspire to the “forever young” mantra know what yoga pants mean. They mean we don’t have to always think about holding it in, they mean we can EAT, they mean it HIDES imperfections and flaws while we are in pursuit of perfection, they mean we can — for the duration of the wearing of yoga pants –NOT be self-haters or ashamed of our silhouette in the reflection of a shop window.

At least that’s what yoga pants did for me. Until now, that is.

WELL…maybe that’s true, but it could also have been this. Lululemon is recalling some of their yoga pants because of a teensy weensy transparency “issue”.

Yup, you can see through ’em.

According to a Lululemon company statement, the recall is due to “the coverage… resulting in a level of sheerness in some of our women’s black Luon bottoms that falls short of our very high standards.”

LOL.

The transparent pants, which resulted in a recall of 17% of product, are the fourth quality-control issue that Lululemon has had this year.

For the outrageous price of a Lululemon product, would it be too much to expect that they’re well-made?

Seventy percent of their clothing is manufactured in third-world countries with factories in China, Taiwan, South Korea, South America, Israel, Indonesia, Thailand and Vietnam.

The Lululemon website explains, “Global economic forces…have shifted manufacturing to more cost-attractive locations and resulted in closures of some domestic factories.”

Good times, y’all!

Instead of using the goddess-given benefits of Spandex to crunch and smash together all my cellulite into one hot tight mass of “muscle”, everything I DON’T want the world to see is OUT THERE. I’ve been OUTED.

Hell, even I don’t want to see that cottage cheese on the back of my legs. Now I have to be stressed out that YOU can see it, too?

And what’s worse? My confession? I don’t wear underpants under my workout gear. I hate  panty lines; they just bother me. Now I learn that it’s all on display and I never knew it.

Apparently I’ve been giving it away for free, as my mom would have said. Not only my butt, my cellulite, and my C-section scar, but — oh joy –you can discover whether I’ve had a full Brazilian OR NOT.

i’m ashamed to say that I bought into the hype —which is huge in SoCal — and I’m gonna march myself right on to the Lululemon shop in La Costa at The Forum and hand them back so I can get my $79.00 plus tax put back on my credit card and hippity hop over to Target and buy several new very densely packed yoga/workout pants for about $25.00 each. A much better bargain and my girly parts and cellulite will stay private.

I don’t want to be indelicate, but I discovered that Lulus demonstrate an embarrassing  explicitness in the female genitalia area that most would wish to avoid — unless you’re like Miley Cyrus or something.

That is so crazy. Crazy, crazy, crazy.  I think you prolly have a very good picture of what would happen if a salesperson insisted I bend over.

christine Day, CEO LululemonLululemon CEO Christine Day replaced Lululemon founder Chip Wilson in 2007. Before that, she was an executive at Starbucks. She has been criticized for growing the company too fast with a resulting loss of quality.

I don’t want to put the hate on a woman at the helm of anything, but I think women in positions of ultimate power have a tendency to model themselves after males in similar positions and forget the wonderfulness of our gender.

Don’t try to mimic a male; instead, be the best HUMAN you can be.

Shame on AMORAL Sierra Club: To Kill a Wolf – July/August 2013 – Sierra Magazine

SHAME ON SIERRA CLUB.

They published an essay by a subhuman who killed a wolf to see what it felt like.

For the “experience.”

I am beyond shocked and disgusted by this story in Sierra Magazine, the author, and Sierra Club.

I became a member to contribute to the advocacy for saving, protecting, and respecting animals and our environment.

I do not want to read a detailed accounting of blood lust and thrill killing.

I will cancel my membership immediately and never again support them.

This is not a memorial. This is a snarling and bloodthirsty celebration of animal murder.

I’m ashamed to think that my membership dollars might have in any way contributed to this repulsive article.

A little research reveals Sierra Club’s Mission Statement:

To explore, enjoy and protect the planet. To practice and promote the responsible use of the earth’s ecosystems and resources; to educate and enlist humanity to protect and restore the quality of the natural and human environment; and to use all lawful means to carry out those objectives.

“To explore, enjoy, and protect the planet.” 

It doesn’t say their goal is to promote the tracking, killing, and subsequent emotions from taking the life of an innocent animal.

Am I the only one that read this and was outraged?

Why aren’t they on the front lines protecting the wolf from delisting and slaughter?
